Lesson 3: Chapter 3: Know your bins – use the Savour Food e-Tools

Watch the video and keep in mind how important it is for all staff to understand the waste management system in place, from day one.

1. Bins: The Basics
As with any service within your business, reviewing your waste management system is a good practice to be done every few years. Your waste management area may no longer be fit for purpose and, if there isn’t a direct link between the inside and outside waste management practices, then you could be losing money on excessive waste costs. Reflect on the current practices in your business and go through the questions in this e-Tool to consider your options with regard to the bins.

2. The Cost of Food Waste
This tool will allow you to calculate the value of the food wasted in your business and allow you to compare its food waste figures against the industry average and good practice benchmark for Irish food service providers. To accurately calculate the cost of food waste, you will need information on the amount of food going out in the bins each month. Having your waste bills to hand will help with this section. If you don’t know how many food bins are collected in a month, you can still get a rough estimate based on covers.
